All joking aside, "Gundam" is a trademark name. It's the same reason why you can't just call every facial tissue a "Kleenex" or every vacuum bottle a "Thermos" or every fluorescent color "Day-Glo." Gundam is a mech but in-universe, they're called "mobile suits." Anyone who says that "Gundams aren't mechs" are either being disingenuous or refuse to acknowledge that "mobile suit" is the in-universe expression for "mecha."

A gundam is mobile suit which is a mobile weapon that requires a skilled pilot to operate just the same as tanks and aircraft. It’s a giant mechanized mobile weapon.
